The course consists of 6 weekends spread over 12 months, two full study days and practice sessions of 20 hours.
Why over 12 months? We want to make sure we give you a thorough understanding of what and how to cook in the different seasons. You will gain confidence in using about 15 different cooking styles and the energetic aspects of various produce. You become acquainted with the choices you have for the different circumstances you live in: climate, work environment and personal health. You will become familiar with many new recipes, and learn to create tasty and colourful meals.
The course will also give you insight into causes of illnesses through an introduction to the theory of Five Transformations and Oriental diagnosis and how good nutrition can contribute to wellness and health. We do not take a ‘good food’ and ‘bad food’ approach, but start from the point of view that each individual needs to discover his or her own needs and requirements.
We are confident that at the end of this course, you will be able to cook healthy and delicious meals for even the strongest critics.

Weekend 1
- Exploration of what your body needs, how it best receives nutrition, why and in what quantities
- Study of the impact of modern eating habits
- The cost and effect of modern supplements like vitamins
- How to shift to a healthier and natural diet
- Understanding the energy of food with the 5000-year-old yin-yang philosophy
- Step-by-step explanation and application of 7 winter recipes for complete meals
- The ease and benefits of different soups suitable for winter, and complete meal soups
- Discover the ease of preparing meals quickly in 10 to 20 minutes
- The medicinal impact of certain foods

Weekend 2
- Focus on breakfast, how to start your day harmoniously and with lots of energy
- Explore the different ways of cooking and using grains, pasta, couscous, noodles, sourdough bread
- Learn new recipes for bread spreads
- Learn the advantages of using vegetable protein
- Various recipes for beans and bean products
- Understanding of what is a good standard diet
- Discover the nutritional habits of traditional cultures in Africa, the Americas and the East and how we can integrate good habits in our own lives
- Cooking for feasts and special occasions – learn to prepare a complete feast menu

Study Day 1
A day of theory that you can then apply in your kitchen. Given by guest teachers who are experts in their field.
This study day focuses on biological evolution and gaining deeper understanding of yin and yang.
Weekend 3
- Learn recipes to generate a quick balance after you’ve partied too much
- Vitamins, how do they work, which ones do you need and how can you replace what we lack
- Practical application of the different cooking styles and cutting techniques
- The energetic benefits of all seven main grains
- Learn recipes that give you strength, inner warmth
- Minerals, how do they work, which ones do you need and how can you replace what you lack
- Discover fermented products
- Use of oil, condiments and herbs
- Quick desserts
- Ginger compresses

Weekend 4
- Preparations for Spring, cleansing recipes prepared with vegetables and herbs
- How to tackle ‘Spring tiredness’
- Deeper exploration of the benefits and use of sea vegetables (seaweed)
- Fresh cooking styles for spring
- Preparation of pickles
- Making balance in your daily menu
- Practical tips on how to save time in the kitchen
- Cooking for just one person – yourself
- You will also learn a short but very relaxing back massage.

Expanding your experience
Every student who finishes the course is offered plenty of opportunity to practice, gain further experience or exchange ideas with accomplished macrobiotic cooks, during practice sessions. We recommend a minimum of 20 hours.
Prices for 2009:
Per weekend: 190 euro (including classes, translation, meals). Staying overnight in a double room: free.
Far away students can arrive on friday night without extra charges.
Single room: + 12 euro per weekend.
Study day with meal: 75 euro.
Full course (6 weekends, 2 study days and practice sessions): 1290 euro (translation included).
Practice sessions: free for full time students.
